Shrimp Paste (Ka-pi Khad Nam) – Preserving Local Wisdom. Krill is fermented in a clay pot for 5-6 months. Kapor leaves are placed on top and pressed tightly with bamboo sticks, which drains the brine and saltiness from the krill. This process is called "Khad Nam" (water scraping/draining).
